I'm sure you've noticed that a lot of my recipes come from Pinterest. I swear, that website is the baker/cooker's dream. It is so easy to find recipes for anything! While cruising through the recipes, I saw this one for Oreo Truffle Stuffed Cupcakes. I KNEW I had to make these. I adore Oreo truffles (or Oreo Balls as i call them), and having them stuffed in a cupcake is awesome. Now, I love cupcakes, but making them can be a pain since we are a small family and cupcakes make a ton. However, my in-laws are visiting and it's my mother-in-laws birthday on the 27th and my anniversary on the 29th. So I'm making these to celebrate both!
Your first step is to make the Oreo truffles. They only require two ingredients since you won't be coating them (though I did coat my leftovers). You need to soften your cream cheese and crush your oreos. For the oreos, I've found the the food processor is the best.

Now, you can use a hand mixer to combine your two ingredients, but I just mix it with a fork. To me, it's a bit easier. Once it's all mixed together, you take small bits of the dough and roll them into one inch balls. Lay them on parchment paper and then chill. I refrigerated mine overnight. You don't have to do this, but with 2 little ones at home, I had to make these cupcakes in parts.

The next day, I got started on my cupcakes. You an use any boxed cake mix you like. I used a white cake mix, and it worked really well with the Oreo. You may also want to use cupcake liners as I did. I didn't want to have to struggle with getting these out of the pans. I used Reynolds Stay Bright cups and they were AWESOME. OK, back to baking. Once you're cupcake batter is ready, pour a small amount into each liner to coat the bottom. Then press one Oreo ball into each cupcake. Then cover the Oreo ball with more cake batter.

Then pop them in a 350 degree oven for about 20minutes.

While your cupcakes are cooling, you can get started on your frosting. I made 2 batches of frosting; an oreo infused Vanilla buttercream, and a oreo infused Chocolate buttercream. I'll include the recipe's for both at the bottom of this post. You just make your basic vanilla and chocolate buttercream and add crushed oreos.
I added a bit too much Oreo to my vanilla batch, and it came out REALLY dark. And I had to end up adding a bit for milk to thin it out a bit.

Once I had my frosting done, I piped it on the cupcakes so there was a nice spiral of frosting on top. We are BIG frosting lovers over here. Then we ate them and VERY much enjoyed them!!!

Recipe:
For the cupcake:
1 Box Cake Mix (I used white) and ingredients listed on box
1pkg Oreos
1 8oz pkg Cream Cheese (softened)
Crush Oreos
Add to softened cream cheese and mix thoroughly
Roll dough into 1 inch balls
Refrigerate until firm
*Once oreo balls are firm, prepare cupcakes as follows*
Prepare cake batter according to box instructions
Fill cupcake liner/tin with enough batter to cover bottom
Drop oreo ball into each tin
Cover with remaining batter. Should make about 24 cupcakes.
Bake for 20minutes in 350 degree oven. Cool Completely.
For the Frosting
Oreo Infused Vanilla Buttercream
1 Stick softened butter
1 lb Confectioners sugar
1tsp Vanilla
10 oreos (crushed)
3-4TB Milk
Using mixer, slowly add sugar to your softened butter.
Once all the sugar is added add your vanilla and 2 TB milk and mix well.
Add oreo's and 1-2 more TB milk until frosting is creamy.
Frost cupcakes!

Oreo Infused Chocolate Buttercream
1 Stick softened butter
1 lb Confectioners sugar
1/3 cup Unsweetened Cocoa Powder
1 tsp Vanilla
10 Oreo's (crushed)
3-4TB Milk
Using mixer, slowly add sugar to your softened butter.
Once you've added all your sugar add your vanilla and your cocoa powder.
Add Oreo and 2TB milk.
Add 1-2 more tablespoons of milk until your frosting is creamy.
Frost cupcakes!
